The FDA Food Code is a model code—not a blanket product approval. Ask which complete system, thickness, details, substrate, texture, cleaners, temperatures, traffic, and cure conditions apply, then coordinate the finish with the project team and local authority having jurisdiction.
Traction, cleaning and rolling traffic
No single texture is best for every department. Wet use, contamination, cleaners, footwear, shopping carts, pallet jacks, scrubbers, and drainage have to be evaluated together.

Accessible routes and workplace surfaces must be planned, installed, cleaned, and maintained as complete conditions. A coating name or isolated test value does not by itself establish project-wide ADA, OSHA, health-code, or slip-resistance compliance.
Details that control the result
Most difficult coating failures and maintenance problems begin below the finish or at an edge, drain, joint, threshold, or temperature transition. Put these conditions in the scope before approving color.
The scope should identify how VCT, tile, grout, adhesive, old coating, curing compound, weak surface paste, and contamination are evaluated and removed. Suspect legacy flooring or mastic requires appropriate assessment before disturbance.
Review slab moisture, vapor, soluble salts, cooler condensation, leaks, grease, oil, sugar, cleaner residue, and previous failures. A finish coat cannot correct an unresolved source below it.
Where required, coordinate cove height, radius, backing, walls, doors, panels, coolers, casework, equipment legs, penetrations, and terminations as part of the assembly—not decorative trim.
Map where water and liquids go. Review drain bodies, trenches, low spots, slope, washdown, housekeeping access, thresholds, cooler transitions, and whether concrete correction is needed before flooring.
Distinguish repairs from active or designed movement. Define treatments at doors, aisles, dock edges, coolers, adjacent finishes, drains, equipment, and phased-work boundaries. No coating can promise moving concrete will never reflect through.
New and remodeled food establishments may have finish, cleanability, cove, drainage, plan-review, and inspection requirements. Coordinate the documented assembly with the owner, designer, manufacturer guidance, and applicable authority having jurisdiction.

Only a product and process qualified for the actual substrate, installation temperature, service temperature, condensation, dew point, ventilation, and cure schedule should be considered. Food or inventory may need removal and refrigeration may need to change or stop. Standard epoxy should not be assumed to fit cold service.
